Combine the tomato paste, herbs and garlic, and season with salt and freshly ground black pepper.
Divide this mixture between the pizza bases, spreading evenly.
Place the bases onto a baking tray. Sprinkle with the mozzarella and bake them in a preheated 200 °C oven for 15 to 20 minutes, until the cheese has melted.
Remove them from the oven and top with strips of chicken and rocket leaves. Serve drizzled with olive oil and balsamic vinegar.
VARIATION: Use roasted vegetables instead of chicken for a vegetarian alternative.
