A superbly savoury quiche, packed with flavour.
|120 g||flour — cake|
|100 g||cheddar cheese — grated|
|125 ml||butter — grated|
|150 g||beef — smoked, chopped|
|8||spring onions — chopped|
|440 g||artichokes — tinned hearts, sliced|
|25 ml||parmesan cheese — grated|
|125 ml||sour cream|
|salt and freshly ground black pepper — to taste|
|5 ml||mustard — powder|
|1||lemon — zest and juice|
Mix all the pastry ingredients together in a food processor and press onto base of a quiche dish (22 cm in diameter) or 6 small dishes (11 cm in diameter).
Sauté spring onions in heated oil and scatter together with artichokes and beef on base.
Sprinkle grated cheese over.
Whisk remaining ingredients together and pour over filling.
Bake in preheated 160 ºC oven for 45 minutes or until egg custard has set.
