Smoked beef and artichoke quiche

Ingredients (14)

PASTRY
120 g flour — cake
100 g cheddar cheese — grated
125 ml butter — grated
FILLING
150 g beef — smoked, chopped
8 spring onions — chopped
15 ml oil
440 g artichokes — tinned hearts, sliced
25 ml parmesan cheese — grated
3 eggs
250 ml cream
125 ml sour cream
salt and freshly ground black pepper — to taste
5 ml mustard — powder
1 lemon — zest and juice

Method:

Mix all the pastry ingredients together in a food processor and press onto base of a quiche dish (22 cm in diameter) or 6 small dishes (11 cm in diameter).
FILLING:
Sauté spring onions in heated oil and scatter together with artichokes and beef on base.
Sprinkle grated cheese over.
Whisk remaining ingredients together and pour over filling.
Bake in preheated 160 ºC oven for 45 minutes or until egg custard has set.
