Savoy cabbage, red pepper and cumin soup

Ingredients (8)

2 Tbs fresh chillies — 573
1 red onion — chopped
1 cloves garlic — cloves, crushed
1 tsp cumin — seeds
1 cabbage — savoy, shredded
1 red pepper — diced
1/2 c almonds — soaked
800 ml stock — vegetable

Method:

Heat oil in large, heavy-based pot. Fry onion & cumin seeds until golden brown before adding garlic and frying for a further 2-3 minutes.

Add the cabbage, pepper and almonds, and cook in stock for 15 minutes (keeping some cabbage for later).

Allow to cool before blending to smooth consistency and season to taste. Fry remaining cabbage and place on paper towel to soak oil. Use for garnish.
