Saucy chocolate pudding

Ingredients (13)

200 g flour — self-raising
30 ml cocoa powder
3 ml cinnamon — ground
110 g brown sugar
2-5 dried chillies — crushed
50 g butter
200 ml evaporated milk
2 eggs — large
10 ml vanilla — essence
100 g dark chocolate — grated
50 g brown sugar
500 ml water — boiled
cream — thick, to serve

Method:

Preheat oven to 160°C.

Sift together the flour, cocoa and cinnamon. Stir in the brown sugar and chilli flakes. Melt the butter, leave to cool for a few minutes then mix in the evaporated milk, eggs and vanilla essence, whipping lightly with a fork.

Mix the egg mixture into the flour mixture carefully and pour into a medium-sized baking dish. Mix together the grated chocolate and sugar, then sprinkle it over the top of the pudding mixture. Carefully pour over the boiling water and bake for 45 minutes.

Serve warm with cream.
