Sardelles lemonates (Lemony sardines and potatoes)

This sardine and potato combination is superb.

|1 kg||sardines — filleted|
|5||potatoes — peeled and sliced|
|3 cloves||garlic — crushed and chopped|
|1||fresh chillies — sliced|
|1||lemon — zest only|
|1.5 l||water — cold|
|125 ml||olive oil — extra virgin|
|2||lemon — juice only|
|2 Tbs||fresh Italian parsley — finely chopped|
|salt — to taste|

Fry the potatoes and the chilli lightly until the potatoes are golden brown before adding the lemon zest and the garlic and pouring in the cold water to simmer for about half an hour.
Skim whatever foam appears on top, add the sardine fillets and simmer for another 7 – 10 minutes until the sardines are just cooked.
Now add the butter, the lemon juice, the sugar, the parsley and salt to taste.
Serve with crunchy bread.
