Buttery puff pastry with sweetcorn, cheddar and onions a twist on a classic corn and cheese samoosa!

Ingredients (9)

1 onion — finely chopped
1-2 green chilli — finely chopped
3 garlic cloves — finely chopped
2 cup sweetcorn
1 tsp dried red chilli flakes
salt and black pepper — to taste
1 1/2 cup cheddar cheese — grated
3 tbsp fresh coriander — finely chopped
1 sheet puff pastry

Method:

Add a splash of vegetable oil to a frying pan and fry the onion and garlic until soft and translucent.

Add the sweetcorn and chilli flakes and allow to cook until the corn starts to brown.

Add salt to taste.

Transfer the corn mixture to a large bowl and allow it to cool to room temperature then mix in the cheese.

Preheat oven to 180C.

Spread samoosa filling over the pastry, leaving a 2 cm border.

Bake tart until crust is golden brown, 20-25 minutes. Let cool 10–15 minutes, then cut into squares.

Top with fresh coriander. Enjoy with an array of chutneys.
