Rosé and watermelon sorbet

3 cup wine — rosé
3 cup watermelon juice
1 cup water
1 cup sugar
5 ml lemon juice
1/2 cup chocolate — plain or coated Turkish delight, finely chopped

Prepare your ice cream machine as per the manufacturer’s instructions.

Bring the wine, watermelon juice, water, sugar and lemon juice to a boil. Turn the heat down and allow it to simmer gently for 5 minutes. Remove it from the heat and allow it to cool.

Once cooled, churn it in the prepared ice cream machine. Once done, fold in the Turkish delight bits and place it in freezer-friendly containers. Freeze for at least 4 hours before serving.

To make watermelon juice, puree watermelon chunks in a food processor or blender until smooth. Strain it through a fine sieve or muslin cloth.


To make some fun cones dip the rim of each sugar cone in a bit of melted white or dark chocolate and then into your favourite colourful sprinkles, toasted coconut shavings, chopped nuts or choc chips.
