Roasted nectarines

Ingredients (6)

4 nectarines — ripe, halved and pitted
100 g digestive biscuits — crushed
25 g almonds — flaked
1 Tbs brown sugar
25 g butter — melted
vanilla yoghurt — low fat, to serve

Method:

Preheat oven to 180°C.

Place halved nectarines skin side down on a roasting tray.
Mix together the biscuits, almonds and sugar and stir in the melted butter.
Place a spoonful of biscuit mixture in centre of each plum so that it resembles the pit and bake in oven for 20 – 25 minutes until nectarines are soft and topping is golden.
Serve warm with a spoon of low fat vanilla yoghurt.
