Roasted butternut, smoked beef, feta and pumpkin seeds quiche
|100 g||beef — smoked|
|80 g||feta cheese|
|100 g||butternut — roasted, cubed and cooked|
|20 g||pumpkin seeds|
|sea salt and freshly ground black pepper|
Preheat the oven to 180°C.
Place the oven rack below the halfway mark.
Prepare the phyllo pastry and the muffin pans.
Chop the Smoked Beef into small cubes and mix the Smoked Beef, feta, and butternut together, and divide between the phyllo cups.
Mix the eggs, cream, salt and black pepper, and pour into the cups. Be careful not to spill over the edges or fill them too much.
Sprinkle the pumpkin seeds and fresh sage on top of quiches. Bake for 15 minutes until the egg mixture is set in the middle.
Remove from the oven and let the quiches cool for five minutes before removing the quiches from the pan, serve hot.
