Ingredients (10)

1 pork loin — boneless
20 ml garlic — paste
sea salt and freshly ground black pepper
30 ml fresh chillies — 573
2 apple — quartered
1 red onion — cut into eights
30 ml unsalted butter — cut into pieces
2 fresh rosemary — sprigs
2 butter — unsalted,cut into pieces
65 ml maple syrup

Method:

Arrange a rack in the middle of the
oven and preheat to200°C.

Rub the garlic paste evenly over all
sides of the pork loin.

Tie the pork with a string to keep
its shape.

Set aside at room temperature for30
minutes.

Heat oil in a heavy based frying pan
over medium-high heat.

Add the pork and sear on all sides
until it’s deep golden-brown.

Transfer the pork loin to a plate.

Turn off the heat, but keep pan on
the stove.

Scatter the apples, onion, butter,
rosemary and sage on the pan.

Drizzle with the maple syrup.

Nestle the browned pork loin on top
of the onion, apples, and herbs, and pour in any accumulated juices from the
plate.

Roast the pork loin for about 1
hour. Transfer the pork to a clean cutting board and let it rest for 20
minutes.

Serve the sliced pork with the onion
and apple pieces.

Drizzle with some of the pan
drippings.
