Roast chicken with soy and plums

Ingredients (11)

1 chicken — whole
2 onions — cut into wedges
5 ml honey
50 ml soy sauce
2 cloves garlic — cloves
6 plums — halved, stoned
450 ml stock — chicken
5 ml cinnamon — ground
5 ml coriander — ground
200 ml couscous
1 baby spinach

Stuff half an onion into the chicken cavity. Place the chicken into a greased roasting pan. Add remaining onion wedges to the pan.

Mix the honey, soy and garlic together. Spread all over the chicken. Turn the chicken breast side down. Roast in a preheated oven for 30 minutes. Turn the chicken over and add the plums. Continue to roast until the chicken is cooked through.

Heat the stock in a saucepan. Add the cinnamon and coriander. Add the couscous. Stir well. Switch the heat off. Add the spinach leaves and cover with a lid. Leave to stand for five minutes. Stir and season to taste.
