Roast beef with fresh herb dressing

1.00 kg beef fillet
15.00 ml black peppercorns — whole
60.00 g butter
30.00 ml sunflower oil
15.00 ml fresh parsley — chopped
15.00 ml fresh chives — chopped
10.00 ml fresh tarragon — chopped
3.00 baby onion — chopped
2.00 ml mustard — powder
90.00 ml vinegar — tarragon
90.00 ml sunflower oil
0.00 sugar — pinch

Tie the beef into a neat shape using string, and roll it in peppercorns.
Heat butter and oil in a pan over high heat.
Add beef and brown all over.
Transfer the meat and butter mixture into an ovenproof dish and roast in a preheated 180 °C oven for 35 to 45 minutes for medium rare or until cooked as required.
Remove from oven and allow to cool to room temperature, then chill overnight.
Remove the string and slice thinly.
Arrange on a serving platter and drizzle with dressing just before serving.
To make the dressing, combine the herbs and onion in a bowl.
Stir in the mustard powder, vinegar, oil and sugar.
Mix well and chill until ready to serve.
