Nothing beats the rich rewarding flavour of a chicken noodle soup, plus this one uses leftovers so it's quick and easy.

Ingredients (10)

1,5 l stock — chicken
30 ml soy sauce
2 cm fresh ginger — cut into matchsticks
1-2 fresh chillies — chopped
limes — juice only
250 g tender stem broccoli
100 g spinach
1/2 chicken — cooked, deboned
300 g egg noodles — cooked
2 hard boiled eggs — shelled and halved

1. Put all the ingredients except the broccoli in a large saucepan
or pot and bring to the boil. Add the broccoli
and simmer for 2 minutes, then turn down
the heat.

To finish

2. Stir in the
spinach and chicken.
Simmer slowly until the
spinach has wilted and the chicken is hot.

3. Serve the soup in
4 bowls. Divide the
noodles among the
bowls and serve
with half a boiled
egg in each. Serve
