Ingredients (12)

60.00 ml oil
2.00 onion — finely chopped
1.00 fresh ginger — grated
2.00 garlic — cloves, crushed
5.00 ml fennel — seeds
3.00 red chilli — chopped
1.00 kg pumpkin — peeled and cubed
5.00 ml mustard — seeds
10.00 ml turmeric
250.00 ml coconut milk
500.00 ml water
fresh coriander — to garnish

Heat oil and cook onions, ginger, garlic, fennel seeds and chillies until onion is soft.
Add pumpkin, mustard seeds and turmeric. Fry for two minutes. Lower heat and add coconut milk and water.
Cook for 15 minutes until pumpkin is tender. Season. Garnish with coriander leaves.
