This quick and easy recipe features classic Italian flavours and a sneaky punch of protein from Herbalife’s Gourmet Tomato Soup sachet. Serve it on its own as an easy Meatless Monday meal or include it as a side dish with fish or grilled chicken.
|2 x 125 g||balls buffalo mozzarella — drained and sliced|
|1 tbsp||olive oil|
|4||courgettes — sliced into 2mm rounds|
|3 - 4 sprigs||fresh basil|
|80 g||Herbalife Gourmet Tomato Soup|
Preheat the oven to 200°C.
Fill the bottom of the baking dish with a layer of courgettes, spread with 1 tablespoon of pesto, then layer with sliced mozzarella, sprinkle with 1 tablespoon of Gourmet Tomato Soup powder.
Repeat layers with the remaining ingredients, being sure to finish with a layer of courgettes.
Drizzle the courgettes with a little olive oil, season with salt and pepper, then cover with tin foil or a lid.
Bake covered for 20 minutes, then uncover and bake for 10-15 minutes more or until golden in places.
Garnish with some basil leaves.
