Ingredients (12)

2 Tbs lemon juice
2 tsp castor sugar
2 Tbs fresh chillies — 573
1/4 cup mayonnaise
sea salt and freshly ground black pepper
6 red onion — salad, finely chopped
1 mediterranean cucumber — cubed
2 avocado — cubed
sea salt and freshly ground black pepper
200 g calamari — rings, cooked
20 prawns — deveined, cooked
1 lettuce — baby gem

For the dressing:
Place the lemon juice and castor sugar in a bowl, stir to dissolve the sugar, whisk in the olive oil and mayonnaise, and season. Add the salad onions, cucumber, avocado, prawns and calamari to the bowl, stir gently to combine and coat in the dressing, then set aside.

To assemble:
Place a lettuce leaf in each serving bowls or glass and carefully spoon in the salad.
To serve:
Place in the fridge until ready to serve, or serve immediately.
