Serve this meat-free pizza scattered with fresh herbs.
|4||potatoes — medium, parboiled and thinly sliced|
|120 g||gorgonzola cheese|
|10 g||fresh thyme|
|fresh thyme — to garnish|
|sea salt and freshly ground black pepper|
Preheat the oven to 210°C. Place two baking trays in the oven to heat.
Drizzle ¼ cup olive oil over pizza bases. Top with potato slices, sprinkle with cheese and thyme, and drizzle with 2 tbsp olive oil. Remove hot trays from the oven and sprinkle with flour, then place pizzas on them. Return to the oven and bake for 10 minutes.
Scatter with thyme and season well. Slice and serve.
