Pork steaks with lemon sauce and gremolata

0.00 pork — fillet, cut in 4
0.00 oil
0.00 sea salt and freshly ground black pepper
0.00 butter
0.00 lemon juice
0.00 crème fraîche
0.00 lime — zest only
0.00 garlic — cloves, chopped
0.00 fresh Italian parsley — chopped

Rub oil and seasoning all around the pork steaks.
Cook in a hot griddle pan.
Keep warm while you make the sauce and topping.
Heat lemon juice in a pan, whick in butter until melted.
Remove from heat and stir in creme fraiche.
Mix all ingredients together.
Serve pork fillet steaks with roasted potatoes, sliced and drizzled with olive oil and salt.
Pour over some sauce and scatter over the gremolata.
