Pork chops with spicy tequila sauce

Ingredients (15)

10 ml chilli powder
30 ml paprika
10 ml nutmeg
80 ml olive oil
sea salt
4 x 200 g pork chops — bone in
100 ml lime juice
200 ml orange juice
100 ml tequila
3 garlic cloves — peeled and pureed
10 ml chilli powder
15 ml paprika
10 ml ground coriander
10 ml ground cumin
50 g brown sugar

Method:

In a shallow roasting tray, combine the chilli powder, paprika, nutmeg, olive oil and a generous pinch of salt.

Add the pork to the marinade and coat thoroughly. Cover and refrigerate for 30 minutes.

Preheat the oven to 200°C.

Meanwhile, combine all the ingredients for the tequila sauce, except the sugar, in a saucepan over a medium heat.

Bring to a boil and reduce by half, then add the sugar. Taste, and adjust the seasoning if necessary. Reduce by half again and set aside.

Place an ovenproof frying pan over a medium heat and add a dash of olive oil. Add the pork chops to the pan and brown on both sides (3 minutes per side).

Transfer to the oven and cook for 8 minutes, remove and allow to rest for 5 minutes before serving.

Serve with onion rings, a side of green vegetables and the tequila sauce.

TIP

To make the perfect onion rings, make a batter of 150g flour, 1 egg, a pinch of salt and 15ml baking powder. Combine with ice cold water mixed into the desired thick-batter consistency. The trick to getting them crispy is placing the ice-cold batter into hot oil at 180°C.
