Pork chops with balsamic onions

1.00 garlic — cloves, crushed
1.00 lemon — zest and juice
15.00 ml fresh chillies — 573
4.00 pork — chops
black pepper — freshly ground
12.00 baby onions — peeled
250.00 ml vinegar — balsamic
125.00 ml wine — red
30.00 ml jam — strawberry

Smear garlic, lemon juice and olive oil over chops. Brown quickly on both sides in a very hot frying pan. Turn the heat down and cook for 4 minutes on each side. Remove from pan, season and keep warm. In the same frying pan, bring onions, vinegar, red wine and strawberry jam to the boil. Simmer for 5 minutes, or until sauce is thick and syrupy. Serve each pork chop with balsamic onions on top of mashed potatoes.
Serves 4.
