Pink coconut ice squares topped with silver powder

Ingredients (5)

385 g tin condensed milk
250 ml icing sugar
250 ml dessicated coconut
Food colouring — pink
silver edible powder

Method:

Line a 20cm square cake
tin with baking paper and
grease with nonstick spray.

1 In a large mixing bowl mix
the condensed milk, icing
sugar and coconut until
well combined. Press the
mixture together.

2 Divide into three equal
portions.

3 Add a few drops of food
colouring to one portion
and mix well.

4 Add a little bit more food
colouring to a second
portion (it needs to be
darker than the first part)
and mix well.

5 Press the uncoloured
portion into the bottom
of the cake tin followed
by the lighter pink and
lastly the darker pink
portion.

6 Leave the coconut ice
to set overnight.

7 TO FINISH

Remove
from the tin and sprinkle
the edible powder over
(if using). Slice into
squares and package.
