Pineapple and coconut crush mocktail

Tropical flavours from the coconut and pineapple make this light summer crush a delicious mocktail the whole family can enjoy.

Ingredients (5)

1 1/2 cup pineapple — cut into chunks
1 cup coconut water
fresh mint
1 lime — zest and juice
sugar syrup — to taste

Method:

Blend all ingredients together with a handful of ice. 

Garnish of pineapple and serve immediately.

Notes 

To make sugar syrup combine 100g castor sugar with 100ml water in a pot. Heat to dissolve the sugar and then boil for one minute. Remove from the heat and allow to cool.

For a creamy version, swap the coconut water for coconut milk.
