Peppered smoked mackerel pâté on toasted canapes

Made from fish packed with healthy omega-3 oils, the pâté is perfect for spreading on toast or crackers. For a lower-fat option, substitute the cream cheese with smooth low-fat or fat-free cottage cheese.

Ingredients (11)

200 g smoked mackerel
230 g cream cheese
10 g spring onion — chopped
10 g fresh parsley — chopped
10 g fennel — chopped
20 ml wholegrain mustard
lemon — zested
15-30 ml lemon juice
45 ml fresh chillies — 573
salt and freshly ground black pepper

Method:

1 Remove the macker­el skin and lightly shred the fish, re-moving any bones.

2 Put the fish, cream cheese, spring onions,parsley, fennel, mus­tard and lemon zest in a bowl and mix well.Season with the lemon juice.

3 Add the olive oil and mix until smooth.

4 Season with salt and a generous amount of pepper.5 Spoon the pâté into an airtight container,seal well and store in the fridge. Spoon out portions into glass jars as needed.

6 To serve

Enjoy the pâté on toast or crackers.
