Ingredients (11)

4 Tbs fresh chillies — 573
2 onion — chopped
400 g zuchinii — roughly chopped
1 cup wine — dry white
250 ml stock — vegetable
salt and freshly ground black pepper
parmesan cheese
400 g pasta — penne
1 l water
10 g salt

Cover base of pan in olive oil. Add onions and gently sweat. Add zucchini and fry. Add wine and cook out. Add stock a little at a time until absorbed.  Blitz in food processor. Season to taste

Boil pasta water with salt and olive oil. Add penne and cook until al dente (Check the sauce and if it is too thick, add 1 ladle of pasta water to sauce). Drain and mix with sauce. Garnish with Parmesan cheese and rocket or micro-herbs.
