Papaya loaf

Ingredients (9)

125 g butter
100 g brown sugar
2 eggs
275 g flour — self-raising
1 tsp lemon — zest only
375 g papaya
50 g pecan nuts — toasted
1 tsp Bicarbonate of soda
50 ml milk

Method:

Preheat your oven to 160 degrees.

Grease (or spray) a loaf tin.

Beat the butter and sugar together until pale and fluffy.

Add the eggs one at a time, after each addition add a tablespoon of the flour.

Add half the flour and the grated lemon rind, stir until combined.

Add the papaya, nuts and remaining flour, mix and spoon into the loaf tin.

Bake for 45 minutes.

Cool, serve with butter.
