|100 g||brown sugar|
|275 g||flour — self-raising|
|1 tsp||lemon — zest only|
|50 g||pecan nuts — toasted|
|1 tsp||bicarbonate of soda|
Preheat your oven to 160 degrees.
Grease (or spray) a loaf tin.
Beat the butter and sugar together until pale and fluffy.
Add the eggs one at a time, after each addition add a tablespoon of the flour.
Add half the flour and the grated lemon rind, stir until combined.
Add the papaya, nuts and remaining flour, mix and spoon into the loaf tin.
Bake for 45 minutes.
Cool, serve with butter.
