Ingredients (10)

4 cup bread — chopped
fresh chillies — 573
butter
4 tomatoes — large, chopped
2 cup cherry tomatoes
2 cup mozzarella cheese
DRESSING
1/4 cup fresh chillies — 573
1/4 cup lemon juice
salt and freshly ground black pepper — to tatse
fresh parsley — or basil

Method:

Melt the butter and oil in a large frying pan and add the bread.
Allow to go nice and golden and crisp and remove from the pan. Allow the
excess oil to drain and set aside.
Combine the tomatoes and mozzarella and pour over the olive oil,
lemon juice and seasoning. Add the bread and herbs and toss.
If you want to make this salad ahead, combine all the ingredients
except for the dressing and just add the dressing when you’re ready to
eat.
