Oven-baked mushroom-flavoured falafel

Ingredients (11)

2 scoops or 26 g Herbalife Formula 1 Savoury Shake Mix
120 g chickpeas — drained
1 egg white
1 tsp cumin seeds
1 tsp ground coriander
1/2 lemon — zested
25 g low fat natural yoghurt
black pepper
To garnish
1 tbsp fresh mint — chopped
1 tbsp fresh coriander — chopped

Preheat the oven to 200°C/gas 6 and line a baking tray with baking paper. Put the Formula 1 Savoury Shake Mix, chickpeas, egg white, cumin seeds, ground coriander seeds, chopped herbs and juice of the lemon into a food processor. Season with pepper and blend until smooth.

Spoon the mixture onto the prepared tray to make six oval shapes. Bake for 15-20 mins until golden and cooked through.

Allow to cool slightly, then serve, garnished with the extra herbs, lemon zest and yogurt.
