Ostrich kebabs with couscous

Ingredients (9)

600-800 g ostrich — cubed
12 apricots — dried, soft
1 onion — small, cut into wedges
1 fresh ginger — thumb-sized, grated
40 ml soy sauce
100 ml jam — apricot
30 ml lemon juice
couscous — to serve

Thread the ostrich, apricots and onion wedges onto kebab sticks. Mix the ginger, soy sauce, jam and lemon juice, and then baste the kebabs.

Heat a griddle pan until very hot and grill the kebabs in batches until golden-brown and medium rare. Serve with couscous and tzatziki.
