Ingredients (10)

70 ml butter
100 ml castor sugar
1 eggs — large
120 ml flour — self-raising
30 ml naartjies — juice
5 ml naartjies — zest only
80 ml amarula liqueur
10 ml cornflour
2 naartjies — peeled, sliced
icing sugar

Method:

Preheat oven to 190°C. Beat the butter and 80ml (70g) of the sugar together until light and fluffy.

Beat in the egg. Fold in the flour and naartjie juice and rind. Spoon into small greased ramekins or cups until three-quarters full. Top each with a naartjie slice.

Mix the remaining sugar, Amarula and cornflour together.

Place the ramekins on a baking tray. Pour the Amarula mixture over the puddings and bake in oven for 20 to 25 mins or until golden. Serve dusted with icing sugar.
