Ingredients (20)

125.00 ml oil
2.00 kg mutton — knuckles
2.00 onion — sliced
6.00 potatoes — quartered
1.00 red pepper — cubed
1.00 green pepper — cubed
5.00 carrots — large, sliced
8.00 patty pans — quartered
8.00 courgettes — sliced
250.00 g button mushrooms
500.00 ml vegetables — frozen
410.00 g tomatoes — chopped
61.00 g soup powder — mushroom
30.00 ml coriander — ground
30.00 ml dried marjoram
30.00 ml allspice
15.00 ml garlic — cloves, crushed
15.00 ml sugar
60.00 ml vinegar — white
15.00 ml paprika

1 Heat the oil in a large potjie and brown the meat.
2 Layer the vegetables on top of the meat in the order listed above, starting with the onions and ending with the mixed vegetables. Top with the chopped tomatoes and their juices.
3 Combine the remaining ingredients with 1 litre of boiling water and pour over the prepared pot.
4 Close the lid and allow to cook gently for an hour, without opening.
5 If necessary, thicken with some cornflour and serve with rice.
