Ingredients (10)

50.00 g butter
1.00 onion — small, chopped
1.00 garlic — cloves, crushed
250.00 g button mushrooms — minced
30.00 ml flour
900.00 ml stock — vegetable or chicken
250.00 ml cream — thick
250.00 ml milk
nutmeg — whole, freshly grated
sea salt and freshly ground black pepper

1. Melt the butter in a medium-sized saucepan and sauté the onion, garlic and mushrooms until soft and the onion translucent.
2. Stir in the flour with a wooden spoon, and cook for 2 minutes. Pour in the stock and simmer gently for 10 minutes.
3. Stir in the cream, milk and grated nutmeg. Taste for seasoning and tip soup into a blender or a food processor. Process until mushroom soup is very smooth.
4. Return soup to a clean saucepan and reheat gently, adjust seasoning accordingly and serve soup with crusty bread.
