This vegan and gluten-free mixed berry choc-chip cobbler is convenient to make, using regular ingredients.

Ingredients (10)

BERRY BASE
1 1/2 cup blueberries
200 g strawberries — sliced
1 tbsp maple syrup
1 tsp avocado oil
COOKIE TOPPING
2 bananas — mashed
1 cup oats
1 tsp cinnamon
1 tbsp cashew nut butter
1/2 cup chocolate chips
1 tsp Baking powder

Method:

Preheat the oven to 180 ̊C.

For the base:

Pour the blueberries, sliced strawberries, maple syrup and avocado oil into a casserole dish and mix well. Set the blueberry mix aside.

For the cookie topping:

Smash two ripe bananas in a large bowl.

Add the oats, cinnamon, cashew butter, chocolate chips and baking powder to the smashed bananas and mix the ingredients until you have a thick, solid batter.

Use an ice-cream scoop to add 7-8 portions of the cookie batter onto the berry mix.

Bake for about 45 minutes.

Add toppings (like ice cream) of your choice and enjoy!

Note: This cobbler can be served both hot or cold.
