Ingredients (11)

3.00 red pepper — quartered
3.00 yellow pepper — quartered
3.00 green pepper — quartered
olive oil — for brushing
65.00 ml fresh chillies — 573
5.00 garlic — cloves, crushed
30.00 ml lemon juice — freshly squeezed
30.00 ml origanum — or parsley or basil, chopped
sea salt and freshly ground black pepper
8.00 anchovy fillets — optional

Preheat the oven grill. Place the sweet peppers on a baking sheet, skin-side facing up, and brush with olive oil. Grill until the skins begin to blister and turn black. Place the sweet peppers in a plastic bag and seal it. Cool slightly in the bag, then remove the skins. Place the sweet peppers in a serving dish. Mix the olive oil with the garlic, lemon juice and herbs and season well with salt and black pepper. Pour over the sweet peppers and mix. Top with anchovy fillets and peppadews, if desired.
