This marble carrot cheesecake is the best of both worlds!
|250 ml||carrots — grated|
|1||box carrot cake mix|
|1||cream cheese — tub|
|1||cottage cheese — smooth|
Preheat the oven to 160°C. Line a 23cm round spring form cake tin with baking paper and grease with non-stick spray.
1. Carrot cake: Mix the grated carrot with the prepared carrot cake mix and transfer to the prepared cake tin.
2. Cheesecake: Beat all the ingredients together until smooth. Pour the cheesecake mixture over the carrot cake mixture, then bake for 1 hour or until the cheesecake has set but is still a little wobbly in the middle.
3. Remove the cake from the oven and leave in the tin to cool – the cheesecake should set completely.
