It's loaded with protein packed nuts, and has a lovely rich flavour.

Ingredients (4)

12 Medjool dates
1/2 cup cashew nut cream cheese
1/2 tsp harissa paste — or ½ tsp black pepper & ½ tsp lemon zest
To garnish
1/8 cup pecan nuts — roasted and salted or red micro sprouts

Make a small cut in the side of your dates and remove the pits.

Mix the cheese and your flavouring of choice together in a bowl. Place the cheese mixture into a piping bag, and gently pipe the cheese filling inside each of the dates. The dates can be served immediately or refrigerated where they will keep for 3 days.

Place the stuffed dates on a serving plate and garnish with pecans or sprouts.
