|lemons — juice only|
|100 g||blueberries — frozen into iced cubes|
|2-3||lemongrass — stalk, bruised|
|1 l||sparkling water — chilled|
|2||lemons — sliced|
|5 g||fresh mint|
|blueberries — to serve|
Place the lemon juice, sugar and lemongrass in a pot, add ½ cup cold water and stir over low heat until the sugar dissolves. Remove from the heat and set aside until cool.
Pour the lemon syrup into a jug and add the sparkling water, blueberry ice cubes, sliced lemons and mint.
To serve: Pour into glasses and serve immediately, with extra blueberries.
