Lemon and blueberry fizz

Ingredients (8)

lemons — juice only
50 g sugar
100 g blueberries — frozen into iced cubes
2-3 lemongrass — stalk, bruised
1 l sparkling water — chilled
2 lemons — sliced
5 g fresh mint
blueberries — to serve

Method:

Place the lemon juice, sugar and lemongrass in a pot, add ½ cup cold water and stir over low heat until the sugar dissolves. Remove from the heat and set aside until cool.

Pour the lemon syrup into a jug and add the sparkling water, blueberry ice cubes, sliced lemons and mint.

To serve: Pour into glasses and serve immediately, with extra blueberries.
