|1/2 cup||parmesan cheese — grated|
|1/2 cup||mozzarella cheese — grated|
|1/2 tsp||Italian herbs|
|1/2 cup||basil pesto|
|250 g||pulled lamb|
|50 g||feta cheese|
Heat an oven to 200 C.
Place cauliflower in a food processor and pulse until it is the same consistency as rice.
Microwave the cauliflower for 4 minutes and drain excess liquid. Combine with both cheeses and eggs, followed by salt and Italian herbs.
Mix until the consistency of dough.
Spread dough onto parchment paper and bake for 10-15 minutes.
Spread pesto over the base, followed by lamb, feta and coarse salt. Bake for 5 min.
