|250 ml||chickpeas — soaked|
|2||garlic — cloves, crushed|
|salt and freshly ground black pepper — to taste|
|olive oil — and paprika|
Pour off the chickpea soaking water and boil the chickpeas in clean water until soft.
Drain, but reserve about 125 ml (1/2 cup) of the water. Mash with 125 ml water. Add the garlic, lemon juice, salt and pepper and mix to form a spread. Spoon into a dish and pour over a little olive oil. Sprinkle with paprika.
Makes about 500 ml.
