Whisk milk, eggs and cinnamon together in a shallow bowl.
Dunk the sliced hot cross buns in the egg mixture, soaking both sides.
Add butter to a cast iron skillet and heat over medium-high heat.
Transfer the prepared hot cross buns to the hot skillet and fry until golden, 3 to 4 minutes per side.
For traditional hot cross buns, serve with crispy bacon and drizzle with golden syrup.
For chocolate hot cross buns, serve with crushed Easter eggs and drizzle with melted chocolate.
