Hot cross bun brownies

Chunks of toasted hot cross bun encased in a dense chocolate brownie - just the hot cross bun treat for Easter!

Ingredients (9)

2-3 hot cross buns — cut into cubes and lightly toasted
1 cup butter — melted
2 cup sugar
4 eggs
1 tsp vanilla essence
1/2 cup cocoa powder
1 1/2 cup flour
1/2 tsp baking powder
1/2 tsp salt

Line a 20cm square tin with baking paper and top with a layer of toasted hot cross bun chunks.

Mix butter, sugar, eggs and vanilla essence together.

Add cocoa, flour, baking powder and salt. Mix well.

Add half of the batter to the tin, top with some hot cross bun chunks and then allow the batter to rest for a few minutes.

Bake at 180C for 40 minutes or until just cooked, they should still be fudgy. Allow to cool and set before cutting.


Be sure not to overcook, else they will be cakey and dry.

This recipe is for an American style brownie. You can easily use a packet brownie mix or your favourite brownie recipe with chunks of toasted hot cross buns for delicious results!
