4-8 chicken — pieces
30 ml fresh chillies — 573
60 ml honey
100 ml wine — dry white or chicken stock
fresh thyme — sprig
baby potatoes — to serve
mixed vegetables — to serve

Method:

Preheat oven to 190°C.

Arrange the chicken pieces in an ovenproof baking dish. Add the sprig of thyme, drizzle with olive oil and season well with salt and freshly ground black pepper.

Mix the honey and wine (or stock) together and pour into the dish. Roast in the oven, basting the chicken every 10 minutes with the liquid in the dish for about 40 minutes, or until golden and cooked. Serve with steamed baby potatoes and vegetables.
