Ingredients (17)

1 kg beef ribs
4 tbsp olive oil
1 onion — roughly chopped
1/2 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
1 tsp ginger, garlic and red chilli paste
salt and black pepper
1 carrot — peeled and chopped
2 tomatoes — grated
1 tin chickpeas — drained
1 cup brown lentils — boiled until soft but still holds it shape
1 handful fresh parsley
1 handful fresh coriander
2 cup broth
2 sprigs fresh mint
lemon wedges — to garnish

Method:

In a large pot, braise the ribs in the olive oil for a few minutes then add the onion and braise until translucent.

Add the spices and allow to braise for another 2-3 minutes.

Add the remaining ingredients, setting aside one sprig of mint for garnishing and top up with a cup or two of water then allow to boil on medium heat until the chickpeas are soft.

Once cooked, stir and serve warm with a squeeze of lemon, some mint and crushed dried chillies.
