Ingredients (9)

1/2 red onion
1 Roma tomatoes — finely chopped
1 haas avocado — ripe, cut into rough chunks
1 garlic — cloves, grated
limes — juice only
1 tsp cumin — ground
1 tsp cayenne pepper — ground
salt
1/2 cup fresh coriander — finely chopped

Method:

In a bowl, thoroughly mix together all the ingredients with only half the avocado.
Add the rest of the avocado so you keep a little of the chunkiness throughout.
Ladled over nachos, generously added to a burrito, as an epic dip, on a burger or even on its own, this is the most divine mash up, and healthy too.

Yields: 1 – 2 cups.
