Grilled pineapple dessert
|1.00||pineapple — peeled, sliced and cubed|
|0.00||icing sugar — for dusting|
|250.00 g||mixed berries|
|125.00 ml||cream — fresh, whipped|
|125.00 ml||readymade custard|
Dust the pineapple pieces liberally with icing sugar and place under the grill until the sugar caramelises.
Mix pineapple and berries in a bowl and drizzle with brandy.
Flambé by lighting the brandy, and allow the flame to die out.
Replace the pineapple with stoned peaches or nectarines and add some caramelised walnuts.
Serve over Green yoghurt drizzled with honey.
