This low-carb, dairy-free salad is packed with all the immune-boosting vitamins we need, which makes for a tasty superfood-packed salad. Brought to you by Zespri® Kiwifruit.
|2 tbsp||fresh lime juice|
|2 tbsp||extra virgin olive oil|
|1/2 tsp||black pepper|
|4 cup||kale — or mixed greens, chopped|
|2||Zespri™ Vita Green Kiwifruit — peeled and chopped|
|3/4 cup||edamame beans|
|1/3 cup||pistachios — shelled and salted|
Cut cucumber in half lengthwise and deseed. Place cucumber seeds in a food processor or blender.
Add lime juice, olive oil, garlic, honey, salt and pepper. Process until well blended.
In a large bowl, massage half the cucumber-lime dressing into the kale until the leaves are coated and the kale has darkened a bit in colour. (If using mixed greens, omit this step.)
Slice seeded cucumber and toss cucumber, kiwifruit, edamame beans and pistachios with kale and remaining dressing.
