Ingredients (8)

750.00 g flour — cake
5.00 ml salt
YEAST
250.00 ml water — lukewarm
2.00 Litres sunflower oil
SYRUP
500.00 ml white sugar
250.00 ml honey
250.00 ml water
cinnamon — ground

Method:

Sift flour and salt into an earthenware bowl and make a well in centre. Dissolve yeast in lukewarm water, pour slowly into well in flour and lightly pull in flour from sides. Add more lukewarm water if needed to make a very soft dough. Beat with a wooden spoon, or knead by hand.
Cover bowl with a thick cloth and set aside for 2 to 3 hours, or until dough begins to bubble and doubles in size. Heat oil until very hot in a deep saucepan. With damp hands, take a handful of dough and squeeze tightly onto a dampened teaspoon. Drop spoonfuls of dough into oil, 8-10 at a time. Leave until puffed up and golden brown, then remove with a slotted spoon and drain on absorbent paper.
SYRUP: Mix sugar, honey and water over low heat until sugar dissolves. Serve warm, in the syrup, sprinkled with cinnamon.
