Preheat the oven to 180°C and grease a 12-cup muffin tray.
Using a rolling pin, roll the bread slices flat.
Cut them into rounds using the rim of a glass and a sharp knife.
Dip 12 rounds of bread into the egg mixture and place each one into the bottom of the muffin tray.
Pop in a piece of marshmallow Easter egg and cover with another egg-dipped round of bread.
Tuck it in neatly allowing the bottom and top bread pieces to bond when cooking.
Bake for 12 mins or until golden.
Allow to cool before removing from the muffin tin.
Dust lightly with icing sugar before serving.
