A mid-day refresher for a warm summer's afternoon.
|50 g||fresh ginger — thinly sliced|
|1 l||apple juice|
|1 l||soda water — cold|
|2||apples — red, finely sliced|
|ice — to serve|
Place the sliced ginger, apple juice, water and honey in a pot, stir to dissolve the honey, then simmer for 5 minutes over a medium heat.
Allow to cool completely, then strain the liquid into large jugs, add the soda water and stir well.
Fill glasses with ice and pour over the liquid. Garnish with red apple slices.
