1. Put the mushrooms in a marinating dish. Cover with the olive oil. Add the garlic and oregano. Season generously with salt and freshly ground pepper.
2. Heat a large pan and fry the mushrooms in batches until slightly golden but still firm.
3. Remove from the pan and set aside to cool completely.
4. To serve Arrange the mushrooms on a platter and spoon a dollop of avo dip on top of each. Sprinkle the crushed dried chillies over (if using) and top off with fresh basil.
