Garlic and vegetable bake
This vegetarian and one-pot dish is fantastic.
|25 ml||fresh chillies — 573|
|1||onion — large, chopped|
|1||yellow pepper — or green pepper, chopped|
|250 g||button mushrooms — sliced|
|1||tinned tomatoes — chopped|
|5 ml||mixed fresh herbs|
|1||courgettes — sliced|
Oven temperature: 200°C
Heat the oil and sauté the onion until soft. Add the green pepper and mushrooms and cook for a few minutes. Add the tomatoes and herbs and then the courgettes. Add a little water or vegetable stock if you need to. Cover and simmer for 20 minutes until the vegetables are tender.
Stir in the beans and spoon the mixture into a greased ovenproof dish. Cut the garlic bread into thinner slices. Place the slices on top of the vegetables. Bake in a preheated oven for 10 to 15 minutes, or until crisp.
